I enjoyed this article's tips and hope others do, too. One of my favorite ways to eat a variety of vegetables is in vegetable soup.

This may sound kinda odd, but here's something that's helped me increase my veggie intake.

I'm big on texture when it comes to food. I don't care if something tastes awesome - if it has a nasty texture, I won't eat it. A lot of veggies (squash especially comes to mind) are so "tough" and chewy that the thought of chewing them makes my skin crawl. But I found that if the veggies were julienned as opposed to being in chunks, I had no trouble eating them and actually enjoyed them.

So now, when I need to eat some veggies, I make sure that they're julienned or shredded. I know that doesn't seem to make a lot of sense, but it's worked for me.

It does make sense. Texture is very important to how people perceive what they eat. For instance, I like things like zucchini and summer squash either raw or lightly cooked. If it is cooked too much, I'm repelled by the texture but the flavor is about the same.

Megidolaon, that makes sense, though the texture doesn't seem to bother me. Thanks for mentioning it.

One thing that increases my vegetable intake is if I buy or keep prewashed vegetables or salads (though it's probably good to wash them again) in my refrigerator or cook a large quantity so I have leftovers. That makes eating vegetables almost as easy as eating a processed snack food.

Tell yourself that you cannot eat your main course meal without a fruit first. Therefore, you will eat the fruit. Next, mix the vegetables in with your daily meals.

Personally, I love fruit so I eat it as snacks or as dessert frequently.
